                                                         LENTILS SALAD 
                                                     WITH LINSEED (FLAX)

I think we all have our traumas about our parents forcing us to eat lentils cause they are really good for our health!

I dont know why i didnt like to eat them AT ALL…
maybe was it was too heavy for a kid , maybe like all kids didnt want to eat something that someone is forcing them to eat it..
Dont know…
I like lentils as we cook them it in Greece..like a soup..(i will give you the recipe another time, its really tasty)but i believe first of all that by all this boiling…all the healthiness is gone..completely..
So i decided to find another way to eat lentils so its lighter and tastier and healthier ofcourse!!
We all know that eating vegetables fresh is the best way to eat them..so salad with lentils and fresh vegetables its teh best..also i have to inform you that parsley has the highest contents of vitamin C if you eat it fresh!!
More than an orange!
I will also add some linseed (flax) which is  incredible healthy check about linseed here (λιναροσπορος in Greek , linien seed in german)

I am going to give you a really tasty healthy and really easy to make recipe!!all you need is some minutes!!!
You can eat it as a salad but also as a main dish

Its really good to put the lentils for some hours in the water so they will boil faster..
Boiling faster its not a matter of time but a matter of health.Lentils can keep all the good stuff ..
If you dont have time or you didnt thought about it its really ok to put the lentils to boil as normal..
The normal time is about 15-20 minutes this time count after the water has started boiling..not the time that you put it on fire..
if you had them into  water then 10-15 minutes is ok.

When the lentils are ready filter out the water and put them in a bowl

chopp the onion, the tomatoes, the pepper and the parsley


into really small cubes , cause remember we are not going to cook them
and you dont want to have big pieces of onions in your mouth

 

if you have you can add some sundried tomatoes also
when you finish cutting the vegetables ad them in the bowl. with the boiled lentils
(filter out the water)

add the linseed then the salt pepper and oregano and at the end the olive oil.

tip : always put herbs before adding oil, cause then its really hard to mix them good

tip2: if you want to store the food for later i recommend you not to put the onions..onions have to be fresh
in a salad…otherwise you get a really bad smell

Put some peppers at the middle or some orande (i like orange) and serve it cold

So!Enjoy…
As i said before you can eat it as a salad but its really nice served as a main dish.

I strongly recommend that you will serve it with some smoked fish!!!

Γεμιστα  is a typical Greek recipe

usually we use tomatoes , aubergines , peppers ,zucchinis …
the idea is that we empty the inside of the vegetables and then creating a mix with the inside and rice
we are stuffing them and bake them in the oven.The vegetables are baked and the rice is cooked inside the vegetable ..so here in this recipe vegetables is our pans!! inside a big pan in the oven

Its really tasty and you may eat it warm but also cold from the fridge.
Its completely vegan but many people put also minced meet inside.Thats also tasty but i prefer the original one!

for counting how many ingredients we need to think how many people will eat and make 3 vegetables for each one
for example for 4 persons we will need

3 tomatoes
3 peppers
3 zuchinis

but if you like aubergines put aubergines etc.etc
or maybe some like to eat only tomatoes…

collecting our ingredients is very easy you just have to care about finding big tomatoes..big peppers and not to thin zucchinis and not to big aubergines (aubergines are too bitter and anyway always big enough)

we will also put some potatoes in our pan in the oven to serve the vegetables with.

wash all the vegetables really carefully ..
we have to cut all the vegetables top and keep it to use it as a “hat“
like the images above :

remember!dont throw away the top of the tomatoes we are going to use them!!

 the most difficult or more boring thing is to take out the flesh of the tomatoes..
make with a good knife small squares at the inside of the tomato

 then make with the knife the round of the tomato so you can remove easily the cubes you have created..be aware of not hearting the tomatoe and try to keep it in shape..the tomato has to be our pun for th rice and has not to have halls or any breaking…

by using a spoon remove all the cubes slowly slowly collecting it into a bowl..
we are going to use it for the mixing rice

cut also the top of the peppers and remove the seeds ,keep also here the cups

 remove the inside also from the zucchini or the aubergines

  and use the inside by chopping it its useful for our mixture with rice

i used some onions and some spring onions..
cut the into really small pieces..also the persil..
and then fry them in a pan with some oil for 2-3 minutes..
(if you want to put minced meet also inside..now its the time to put also and fry a bit the meat)

put the rice inside the bowl with the cubed tomatoes and add the vegetables from the pan, add olive oil, salt , pepper and oregano,,to taste if you have the taste you want try from the juices at hte bottom

now put all the vegetables at the pan you are going to put in the oven..also cut the potatoes into small pieces..the shape doesnt matter but just remember they have to be in the same size so they will be cooked all in the same time
start to fill them with the mix of rice

after stuffed them all put the cups on the vegetables
use the potatoes to keep the vegetables to stay at the place you want and not fall so the mix is not going out in the pan..
put some garlic salt pepper and oregano (i put a bit of curry too) at the potatoes and add some water and oil..
cook them at 200 o C for 1,5 hour
by the end of the time about 45 min or 1 hour you will see that the top of the vegetables are getting brown ..protect them with some foil pepper

the most important thing to remember is!!alwas serve them with some FETA cheese (if you are not vegan)

BANANA MARMELADE

i bought some bananas some days ago…
and i did this mistake that we all do some times…
bying more fruits than you can eat…its not my fault..they were so cheap!!!
And so tasty with my oat-banana-yoghurt-honey-tahini breakfast…

So they got old..black..rotten..ok for a normal person not rotten but they got black..i dont like them like that!
And many many times when you have fruits that they are not in the situation that you would like to be…dont throw them away!!!but make a nice marmelade!!!

For example banana marmelade is really nice to use it at your breakfast or at nice desserts you can make..
or in a slice of bread with nutella and banana marmelade!!!

its so easy

just cut teh bananas into small pieces ..as small you can get them by knife (ofcourse pill them off first)

and then put them in a pan with ecxacly the same quantity of sugar
(for example 200grs banana = 200 grs sugar)

put them in low fire and let them melt and boil…
the smell is not so nice when its cooking but the taste after is perfect!!!

tip : you can add some cinnamon and make the marmelade fly to the sky…

of course cause its really pure we cannot keap it for a reaaaaaaaaally long time in the fridge..

something fresh..something borrowed..something new….

chicken or pork with sour sauce its something that we have all tasted…most of the people buy ready made sweet and sour sauce from many famous companies…
if i tell you how easy is to make it your own and how much tastier..next time you will cook and not buy it!!

first time i saw pineapple as an ingredient was at my favourite pizza delivery in my home town…
i just thought “bleah´´ and never thought about it again…

once i was in Denmark and i visited a Mogolian restaurant…it was working like a boufet…you give something like 10 euros and you eat as much you can eat…

I was so  happy!!! haha
so we are going at the boufet..
EVERYTHING was uncooked!!i got crazy!!!i didnt know what to eat!!so i just choosed teh things that looked i can eat non cooked..some vegetables…some pineapple and some chicken filet really really thin and smoked..so i was safe…
at the end of the row…behind the wall was one guy that he was taking your plate..and put it all in a pan and cook it…soooo
by mistake i had in my plate chicken with pineapple…and i said oooohh what the heck lets try it!!
it was awesome!!!!


We are going to need :

chicken fillets
1 red pepper                                        
1 green pepper
1 carrot
200gr pineapple fresh
1 big onion
olive oil
3 sp honey
5 sp vinegar
maybe some sugar                
                                                                                                

if you dont have honey or you find this ingredient expensive you can use sugar (2 sp)

1 sp flour

chopp all the vegetables into pieces not too small..
carrots i will prefer it in a different way than round pieces..improvise!!i like to cut them like this :

Put the chicken fillets as they are without cutting them at the oil from both sides till they get yellow-brown
remove it from the pan .

Put more oil and then add the onions and when they get yellow-brown add the peppers and the carrots
in between cut the chicken into small pieces and add them at the pan..
live them for 3 minutes in low fire..
add a cup of water the vinegar and the honey salt and pepper
live the soya for the end…
let them boil for a while and when the water is enough for a sauce
take a bit out in a cup that you have puted the flour inside
mix the flour with the water and put the mix inside the pan and really fast mix them…
remove from fire when you see the sause is thick enough for your taste..this will happen really fast
dont be afraid to add more water or more flour!!
taste and if its not salty enough add the soya!
be carefull soya sometimes can be really salty and we add a lot in the food cause we like the taste but then the
result is too salty…if you want strong soya taste be aware of that and dont put salt at the cooking time..

in a country that white people are something really weird and strange and white girls the dream of men…and i thing white men dream of a girl but they are not allowed ofcourse not even thing about it

and white girls coast 40000rps


in a country that when you were the clothes that back home  makes you feel that you are the most dressed you could be ..walking the streets makes you feel as much naked you ever felt in your life

Και ναι σκεφτομαστε ολοι πωπω!!τι λαχανοντολμαδες…θα κανω χιλια χρονια να τους μαγειρεψω!!
τσουκου!!
απλα και ευκολα παμε να φτιαξουμε λαχανοντολμαδες…
ενταξει δε λεω θελει να χεις και λιγο μερακι…η απλα λιγη αγαπη!

θα χρειαστουμε

– 1 μεγαλο λαχανο
-250 γρ κιμα
-2 κουπες ρυζι
-2 μεγαλα κρεμμυδια
– 1 ντοματα
-μαιντανο
-αλατι,πιπερι, ενα τσακ καρυ
-ελαιολαδο

και για τη σαλτσα

-2 κροκους αυγων
-χυμο ενος λεμονιου
-λιγο αλευρι

Πλενουμε το λαχανο κ χωριζουμε τα φυλλα του προσεκτικα να μη σπασουν

οσο πιο μεγαλα κομματια εχουμε τοσο το καλυτερο.

Τα ζεματιζουμε σε νερο για 5/10 λεπτα
οταν τα εχουμε στη κατσαρολα τα σκεπαζουμε με ενα πιατο ετσι ωστε με τη βραση του νερου να μην ανακατευονται κ σπασουν.

Εν τω μεταξυ τσιγαριζουμε το κρεμμυδι και μετα ανακατευουμε ολα μαζι

με το κιμα την ντοματα το μαιντανο και τα μπαχαρικα και προσθετουμε κ λιγο φρεσκο ελαιολαδο.

Οταν ειναι ετοιμα τα φυλλα απο το λαχανο αφαιρουμε προσεκτικα και τα αφηνουμε σε ενα πιατο να κρυωσουν λιγακι.
Μετα περνουμε ενα ενα τα φυλλα και τα γεμιζουμε με το μιγμα μας.

Κλεινουμε προσεκτικα και φροντιζουμε να μην ασφυκτιουν!!

Αφου φτιαξουμε ολα τα μικρα πουγκακια μας…βαζουμε στη 
κατσαρολα οτι λαχανο ειχε σπασει και δεν χρησιμοποιησαμε ετσι ωστε να κανουμε μια ωραια βαση να ακουμπησουμε τα πουγκακια ωστε να μην κολησουν…
βαζουμε νερο μεχρι να σκεπαστουν και τα αφηνουμε να βρασουν σε χαμηλη φωτια περιπου μιση ωρα..και επισης τα σκεπαζουμε με ενα πιατο.

Η σαλτσα μας

χτυπαμε τα τους κροκους αυγων προσθετουμε το λεμονι και ριχνουμε λιγο λιγο ζουμακι απο το νερο που βραζουν οι ντολμαδες..μερικες φορες προσθετω και λιγο αλευρι..
και μετα προσθετουμε μεσα στη κατσαρολα και ΕΤΟΙΜΑ!!!

σερβιρουμε με λιγο μαιντανο για ομορφια και για πιο απαιτητικους ουρανισκους με καφτερο κοκκινο πιπερι!!

Hello darling !
So the recipe…

200 g powdered almonds (I used those I found in the BioMarkt, they taste a bit caramelized, I don’t know why, but they’re really, really awesome)
150 g sugar
100 g butter
2 eggs + 1 egg yolk for the outside
2 x Blätterteig (I don’t know how it’s called in English… Puff pastry ?). You can find some in Rewe but they’re made with margarine instead of butter, so they’re not as tasty as the homemade butter version… Anyway that’s what I used yesterday (the one from Rewe)

Mix the almonds and the sugar
Add the eggs, then the butter (it must not be melted, only a bit softened), and a pinch of salt

You put the first dough on the cooking paper (directly on the oven’s sheet pan), you make a few holes with a fork on it, then you put the almond-sugar-etc mix on it, just let 2-3 cm all around of free dough. You put the second dough on it, and paste both sides with a bit of water, and roll the edges so it will stay well closed.

And you put the last egg yolk on it (it’s best with a paintbrush but you can do it with your fingers… You dirty baby !)

Then you draw on it with the end of a knife, something like a chess plate, you see what I mean ? -> http://www.galette-des-rois.com/images/galette-des-rois.jpg and you make holes in the dough (not many, like a dozen tiny holes suffice, but if you don’t do it the dough is going to be dry)

That’s it ! Now you can put it in the oven, min. 30 minutes at 200°C, but it can take longer with your oven… ; )

Τερμα τα αστεια!!!
Ωραια, νοστιμη, βελουδινη , παχυρευστη μπεσαμελ!!! και μερικα μικρα tip

Η μπεσαμελ καταρχας πρεπει να πουμε πως μπορει να ειναι μια συνταγη μαγειρικης αλλα απαιτει την ακριβεια της ζαχαροπλαστικης!
Φυσικα και πολλοι που εχουν φτιαξει αρκετες φορες ,εχουν βρει μονοι τους το δικο τους τροπο παρασκευης της αυξανοντας  η μειωνοντας τις ποσοτητες των υλικων!

Λοιπον θα σας δωσω μια συνταγη για το πως να φτιαξεται μια μπεσαμελ με επιτυχια και να σταματησει να σας φαινεται κατι το πολυ δυσκολο, σημειωνοντας οσα εμενα με δυσκολεψαν μεχρι να φτασω στο σημειο να μεινω ικανοποιημενη *και φυσικα η μεγαλυτερη ικανοποιηση ερχεται οταν ακους κ απο αλλους το γιαμ γιαμ*

Θα χρειαστουμε

(για ενα κανονικο ταψι)

* 1,5 κουπα αλευρι

* 200 γρ μαργαρινη (3τεταρτα του πακετου)

* 1,5 λιτρο γαλα

* 1 κροκο αυγου

* αλατι , πιπερι

* μοσχοκαρυδο

Βαζουμε σε ενα κατσαρολακι το γαλα με το βουτυρο σε αρκετα χαμηλη φωτια κ τα ζεστενουμε μεχρι να λιωσει εντελως το βουτυρο.Ειναι πολυ σημαντικο να το εχουμε σε χαμηλη φωτια γιατι το γαλα ΔΕΝ πρεπει να βρασει!Αν βρασει χαλασε η μπεσαμελ!

Εχουμε το αλευρι σε ενα μεγαλο μπολ και προσθετουμε σιγα σιγα ανακατευοντας καλα λιγο λιγο απο το ζεστο γαλα (περιπου 2 κουπες).
Επειτα προσθετουμε το μιγμα μεσα στη κατσαρολα και ανακατευουμε με το συρμα που χτυπαμε τα αυγα.Συνεχιζουμε το ανακατεμα μεχρι το μιγμα να ομογενοποιηθει και να αρχιζει να σφιγγει.
Μολις γινει σαν κρεμα σβηνουμε τη φωτια.

Ριχνουμε τον κροκο με πολυ γρηγορο ανακατεμα για να μη ψηθει μεσα το μιγμα.
Με το που βαλουμε το αυγο το μιγμα αρχιζει κ σφιγγει.
Προσθετουμε και τα μπαχαρικα μας  και ετοιμη για ψησιμο!

Χρειαζεται σιγουρα 1 ωρα ψησιμο!

Μπορουμε αν προσθεσουμε κρεμα γαλακτοσ μετα τον κροκο για να δωσουμε μια πιο πλουσια γευση.
Επισης λιγο τυρι θα απογειωσει το πιατο μας ειδικα αν ειναι παστιτσιο η μουσακας!
Η μπορουμε να πασπαλισουμε την επιφανεια του ταψιου αφου εχουμε απλωσει τη μπεσαμελ με τριμμενη φρυγανια

FISH

usually when we cook diet or healthy foods something is missing from the taste…
but they are a lot of recipies or a lot of some tricks we can follow to make a simple healthy not full calories plate!
I ll tell you how to make one with fish!!anyone likes fish??i looooove fish!!!

fish allow us to cook it with many many ways and with teh simple and light taste tha has we can give many many different tastes

TRY THIS :

Προσθήκη λεζάντας

-seelachs filet or pangasius filet or what kind of white fish we like.(mpakaliaro,glwssa,perka)
-anise (chopped : 5soup spoons) 
-1-2 carrots
-2-3 fresh onions
-olive oil
-a bit of lemongrass
-a soup spoon flour
-salt,pepper
-ginger
-carry

Of course cause now we are talking about a diet recipie we are not going to frie the fish
1.one way is to put it at the oven
2.way which i preder cause like this it keeps all the vitamins and minerals is to do it like this :
we put at our frie pan water and on top of it we put a silver net (like this for example we use for tee but a big one)and we cook the fish at the vapor
Notice that the pieces of the fish must not touch one each other.
so if u dont have something like that u can cook the fish at the pan with some water.
If  the fish that we use is fridge we have to use it first to avoid the bad smell.

in 10-15 minutes the fish is ready
if its fresh it needs only 7 minute

many people are used to cook the fish for a long time like 45m or 1 hour
this is completely destroys the taste and the vitamins of the fish.
try it once like this and maybe u like it more.

So..
now we choppe the onions into rodeles
and the carrots we can blend them or chopped them at a shape we like
anis must be really good chopped
vegetables (in this case carrots and fresh onions) must be at the same size for a well balanced cooking.

We put at the pan 2 glasses of water ,then our vegetables and anis and then the spices..
We cook about 6-8 minutes ..sometime maybe its needed to put more water depends of how big is the pan or the temperature.
In a glass we put the flour ,we add some water make it look like glue and then slowly some water of the pan till you have one glass of water-flour

NOTICE
thats its really important that you first put the flour and then the water otherwise the mixture its not going to be smooth

then you take this mixture and you out it in the pan boile it till its creamy.
You take it out of fire and put some olive oil!!!
